Unlike supermarket candies that rely on a single mold and a single loud flavor note, each Copperfinch creation combines two or three separate kettle pours. We intentionally keep our exact compositions and ingredient formulas unprinted so every piece remains a genuine first-bite guessing game.

1. The Solstice Orrery Lollipop

The Story: Born on a clear November night after we set up an antique brass telescope behind our studio near Cedar Lake. We wanted to capture the depth of a winter sky inside a thick, hand-poured disc that catches candlelight like an astronomical glass lens.

2. Borealis Prism Drops

The Story: Inspired by northern lights rippling above the upper Midwest and the beveled glass panes of historic Saint Paul conservatories. We pour two contrasting chromatic bands side by side and hand-shear them at forty-five-degree angles while warm.

3. Vesper Amber Stained-Glass Flats

The Story: Walking through the Calhoun-Isles neighborhood around West 28th Street, you see dozens of century-old Prairie School stained-glass windows. We cast these square lollipops inside heavy brass framing bars and inlay fine threads of pulled satin confection across the amber core.

Flavor Impression Opens with a deep, caramelized fireside warmth that feels like an old library study—then lifts suddenly into a bright, aromatic citrus-orchard crescendo as the delicate ivory lattice threads dissolve.

The Story: Pulling warm confection on a wall-mounted iron hook is one of the oldest disciplines in American candy making. By folding eighty alternating layers of dark twilight violet and glowing copper bronze, we create microscopic air channels that shimmer like woven silk.

Flavor Impression Because of the aerated satin folds, this piece has a delicate, crisp snap at first bite—releasing a velvety roasted-hearth depth paired with a bright, unexpected botanical-tart counterpoint.

The Story: Created for studio guests who told us they were torn between crisp garden-bright notes and cozy autumn cellar notes. Using a custom six-sided brass collar, we pour two distinct halves that fuse along a glowing sunset-orange diagonal seam.

Flavor Impression Depending on which angle touches your palate first, you experience either a lively, herbaceous orchard snap or a deep, mulled-cellar richness—until the orange seam blends both worlds in the middle.

6. Starlight Geode Pillars

The Story: Anyone who has walked the rocky beaches of Lake Superior's North Shore knows the thrill of spotting a split agate glowing in the surf. We spent four months perfecting a double-casing technique that wraps a smooth slate-blue exterior around a coarse, sparkling amber heart.

7. The First-Bite Guessing Flight Box

The Story: Our most requested box for dinner parties, anniversary evenings, and client appreciation gifts. Contains two pieces of each of our six creations above (12 pieces total), numbered wrappers from #01 to #06, six heavy cotton-paper tasting cards, and a wax-sealed reveal envelope.

How the Flight Works Guests taste each numbered piece without knowing its name or profile, jot down their first-bite and mid-palate guesses, and break the wax seal at the end of the evening to compare notes.

Why We Keep Our Exact Formulas Under Wraps

When you pick up an ordinary confection at a supermarket, the wrapper tells you what to taste before you even unwrap it. Once your brain reads a flavor name or scans a formula list, expectation overrides actual sensory discovery.

At Copperfinch Confections, the pleasant mystery is central to our craft. We never publish exact compositions or ingredient breakdowns on our website or outer sleeves so that every lollipop and prism drop remains an authentic blind tasting experience.
