A Glass Restorer, a Culinary Archivist, and One Heavy Marble Slab

How a quiet winter experiment in Minneapolis turned into a neighborhood confectionery dedicated to sweets you won't find in an ordinary supermarket.

How Copperfinch Began

It Started With Leaded Windows and Dinner Table Curiosity

If you had visited our kitchen table in Minneapolis seven winters ago, you would have found two very different workbooks lying side by side. On the left were Julian’s architectural rubbings of Early Prairie School stained-glass windows from homes around Lake of the Isles. On the right were Clara’s transcriptions of late-nineteenth-century American confectioners’ ledger books.

One evening, while discussing how antique amber glass gets its warm depth when held up to afternoon snow light, Clara poured a small kettle batch onto a chilled slab of Carrara marble framed with Julian’s heavy brass bench bars. Instead of pouring a single flat sheet, we layered two contrasting thermal pours and drew a fine satin ribbon through the middle before the slab cooled.

When our neighbors came over for coffee that Friday night, we set a plate of those square amber pieces on the table without saying what was in them. Watching six grown adults close their eyes, debate whether they were tasting toasted orchard fruit, hearth caramel, or winter botanicals—and laugh when they compared guesses—changed our trajectory completely.

Why We Make Confectionery for Grown-Ups

Reclaiming Hard Candy from the Grocery Checkout Lane

Somewhere in the mid-twentieth century, hard candy and lollipops were handed over to mass industrial production. To make millions of pieces an hour, factories stripped away everything subtle: they replaced slow open-kettle caramelization with fast vacuum cookers, and traded complex botanical and orchard pairings for loud, one-dimensional profiles.

Most adults over thirty-five stopped buying lollipops not because they outgrew the pleasure of a slow-dissolving sweet, but because supermarket sweets stopped respecting an adult palate.

At Copperfinch Confections, we build every piece the way a perfumer or roaster builds a blend:

  • An Opening Spark: The first ten seconds on the tongue, often contrasting sharply with what the visual color suggests.
  • A Mid-Palate Pivot: As the outer geometry or satin fold dissolves, a second kettle pour emerges with warmer, deeper notes.
  • A Lingering Center: A clean, unhurried finish that pairs naturally with black coffee, oolong tea, or an evening conversation.

What We Do—and What We Refuse to Do

Operating a small storefront workshop at 4304 W 28th St in Minneapolis lets us stay accountable to every person who opens one of our boxes.

40 to 60 Pieces Per Kettle

Once a kettle batch is poured onto the marble cooling table, we have roughly nine minutes to fold, layer, pull on the wall hook, and shear before the glass sets. Keeping batches small means every piece gets shaped while at its peak clarity and luster.

No Printed Spoiler Labels

We stand by our founding question: “Can you guess the flavor at first bite?” We never print flavor names or ingredient breakdowns on the wrapper. Instead, your box includes a wax-sealed key so you can enjoy the guessing ritual first.

Personal Inquiry, Not Warehouse Carts

We never leave crates of candy sitting on warehouse shelves for months. When you submit an order inquiry through our site, we match your request to our weekly kettle schedule so your box arrives freshly poured.
